  • 3 large Eggs
  • 0.5 cup Coconut Milk
  • 0.5 cup Shredded Coconut, Unsweetened
  • 1 teaspoon Vanilla Extract
  • 1 cup Dairy-Free Chocolate Chips
  • 2 tablespoons Coconut Oil
  • 0.5 cup Maple Syrup

Instructions

  1. 1In a shallow dish, whisk together the eggs, coconut milk, shredded coconut, and vanilla extract.
  2. 2Melt the dairy-free chocolate chips in a heatproof bowl set over a simmering pot of water (or in the microwave in 30-second intervals, stirring in between).

  4. 4Dip each slice of gluten-free bread into the coconut custard mixture, ensuring both sides are well coated.
  5. 5Place the soaked gluten-free bread slices onto the hot skillet and cook for 2-3 minutes per side, or until golden brown and cooked through.
