Ingredients

  • 6 large Eggs
  • 1 cup Fresh parsley
  • 1 cup Fresh cilantro
  • 0.5 cup Fresh dill
  • 0.5 cup Green onions
  • 2 tablespoons Dried barberries (zereshk)
  • 2 tablespoons Walnuts
  • 0.5 teaspoon Turmeric
  • 0.5 teaspoon Baking powder
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Olive oil

Instructions

  1. 1Preheat oven to 350°F (175°C).
  2. 2In a large bowl, whisk eggs until light and frothy.
  3. 3Add chopped parsley, cilantro, dill, and green onions to the eggs. Mix well.
  4. 4Stir in barberries, walnuts, turmeric, baking powder, salt, and pepper.
  5. 5Heat olive oil in an oven-safe skillet over medium heat.
  6. 6Pour the egg mixture into the skillet and cook for about 5 minutes, or until the bottom is set.
  7. 7Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the frittata is set and golden brown.
