Ingredients

  • 2 cups Gluten-Free All-Purpose Flour
  • 2 large Eggs
  • 0.75 cup Milk
  • 0.25 tsp Nutmeg
  • 1 tsp Salt
  • 2 large Onions, thinly sliced
  • 4 tbsp Butter (dairy or plant-based)
  • 2 cups Grated Emmental Cheese
  • 1 cup Grated Gruyere Cheese
  • 2 tbsp Fresh Chives, chopped

Instructions

  1. 1In a large bowl, whisk together gluten-free flour, eggs, milk, nutmeg, and salt until a smooth batter forms. Let the batter rest for 15 minutes.
  2. 2While the batter rests, caramelize the onions: In a large skillet, melt butter over medium-low heat. Add sliced onions and cook, stirring occasionally, for 20-25 minutes, or until golden brown and caramelized.
  3. 3Bring a large pot of salted water to a boil.
  4. 4Using a spätzle maker or a colander with large holes, press the spätzle batter into the boiling water in batches. Cook for 2-3 minutes, or until the spätzle float to the surface.
  5. 5Remove the spätzle with a slotted spoon and drain well.
  6. 6In a large bowl, combine the cooked spätzle, caramelized onions, Emmental cheese, and Gruyere cheese. Toss to combine.
  7. 7Serve immediately, garnished with fresh chives.
