Gluten-Free Khoresh Gheimeh (Yellow Split Pea Stew)

A hearty Persian stew made with yellow split peas, lamb or beef, tomatoes, and dried lime. Adapted to be gluten-free.

Ingredients

  • 1 lb Lamb or beef
  • 1 cup Yellow split peas
  • 1 medium Onion
  • 2 tbsp Tomato paste
  • 2 whole Dried limes
  • 1/2 tsp Turmeric
  • 1/4 tsp Saffron threads
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 2 cups Basmati rice

Instructions

  1. 1Soak yellow split peas in water for at least 30 minutes.
  2. 2Cut the lamb or beef into small cubes.
  3. 3In a large pot, heat olive oil over medium heat. Sauté the chopped onion until softened.
  4. 4Add the lamb or beef cubes and cook until browned on all sides.
  5. 5Stir in the tomato paste and turmeric. Cook for 2-3 minutes.
  6. 6Add the soaked and drained yellow split peas, dried limes, and enough water to cover the meat and peas. Bring to a simmer.
  7. 7Reduce heat to low, cover, and simmer for 1-1.5 hours, or until the meat and peas are tender.
  8. 8Season with salt, pepper, and saffron threads.
  9. 9Serve hot with cooked basmati rice.
