Gluten-Free Kenyan Cassava Fries with Chili-Lime Dip

Ingredients

  • 2 large Cassava
  • 2 tablespoons Avocado Oil
  • 1 teaspoon Paprika
  • 1/2 teaspoon Turmeric
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper
  • 1 medium Lime
  • 1/2 small Red Chili
  • 1/2 cup Full-fat Greek yogurt

Instructions

  1. 1Peel and cut the cassava into fry-shaped pieces.
  2. 2Boil the cassava in salted water for 10 minutes, until slightly softened.
  3. 3Drain the cassava and pat dry.
  4. 4In a bowl, toss the cassava with avocado oil, paprika, turmeric, garlic powder, salt, and pepper.
  5. 5Air fry at 400°F (200°C) for 15-20 minutes, flipping halfway, until golden brown and crispy. Alternatively, bake on a baking sheet in a preheated oven at 400°F (200°C) for 25-30 minutes, flipping halfway.
  6. 6For the dip, mix the Greek yogurt, lime juice, and chopped red chili (if using) in a small bowl.
  7. 7Serve the cassava fries hot with the chili-lime dip.
