Gluten-Free Kafta Skewers with Turmeric Rice

Ingredients

  • 1 lb Ground beef
  • 1/2 medium Onion
  • 1/4 cup Parsley
  • 1 tsp Allspice
  • 1/2 tsp Cumin
  • to taste Salt and pepper
  • 1 cup Basmati rice
  • 1/2 tsp Turmeric
  • 1 tbsp Olive oil

Instructions

  1. 1In a large bowl, combine the 1 lb ground beef, 1/2 medium onion (finely chopped), 1/4 cup parsley (chopped), 1 tsp allspice, 1/2 tsp cumin, and salt and pepper to taste. Mix everything together thoroughly with your hands until well combined.
  2. 2Divide the beef mixture into 8 equal portions. Shape each portion into a small sausage shape, about 4 inches long. Carefully thread two of the sausage shapes onto each of the 4 skewers.
  3. 3Heat a grill or a grill pan over medium-high heat until it reaches approximately 400°F (200°C).
  4. 4Place the kafta skewers on the hot grill or grill pan. Cook for 10-12 minutes, turning them occasionally, until the beef is cooked through and has an internal temperature of 160°F (71°C).
  5. 5While the kafta skewers are grilling, rinse the 1 cup basmati rice under cold water. In a medium saucepan, combine the rinsed rice with 2 cups of water and 1/2 tsp turmeric. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes, or until the water is absorbed and the rice is tender.
  6. 6Fluff the turmeric rice with a fork. Serve the cooked kafta skewers over the aromatic turmeric rice.
