Ingredients

  • 8 oz Sweet Potato Starch Noodles (Glass Noodles)
  • 8 oz Beef Sirloin
  • 3 tbsp Soy Sauce (Gluten-Free Tamari)
  • 2 tbsp Sugar
  • 2 tbsp Sesame Oil
  • 2 cloves Garlic
  • 1 medium Onion
  • 1 medium Carrots
  • 1 medium Bell Pepper (any color)
  • 2 cups Spinach
  • 1 cup Mushrooms (Shiitake or Cremini)
  • 1 tbsp Sesame Seeds

Instructions

  1. 1Place the 8 oz Sweet Potato Starch Noodles in a large bowl and cover them with warm water. Let them soak for 15 to 20 minutes, or until they are softened and flexible.
  2. 2While the noodles soak, prepare the beef marinade. In a medium bowl, combine the 8 oz Beef Sirloin (cut into thin strips), 3 tbsp Soy Sauce (Gluten-Free Tamari), 2 tbsp Sugar, 2 tbsp Sesame Oil, and 2 cloves Garlic (minced). Mix well and let it marinate for at least 15 minutes.
  3. 3Prepare your vegetables: thinly slice the 1 medium Onion, cut the 1 medium Carrots into matchsticks, slice the 1 medium Bell Pepper (any color) into thin strips, and slice the 1 cup Mushrooms. Wash and roughly chop the 2 cups Spinach.
  4. 4Heat a large 12-inch skillet or wok over medium-high heat (400°F / 200°C). Add the marinated beef and stir-fry for 3 to 5 minutes, until it is browned and cooked through. Remove the beef from the skillet and set it aside on a plate.
  5. 5Add the sliced 1 medium Onion, 1 medium Carrots, 1 medium Bell Pepper, and 1 cup Mushrooms to the same skillet. Stir-fry for 4 to 6 minutes, until the vegetables are tender-crisp. Add the 2 cups Spinach and stir-fry for 1 minute more, until it is just wilted.
  6. 6Drain the soaked 8 oz Sweet Potato Starch Noodles thoroughly. Add the drained noodles to the skillet with the cooked vegetables. Return the cooked beef to the skillet.
  7. 7Toss all the ingredients together in the skillet for 2 to 3 minutes over medium-high heat (350°F / 175°C), until everything is heated through and well combined. Stir in the 1 tbsp Sesame Seeds.
  8. 8Serve the Gluten-Free Japchae immediately, garnished with the remaining 1 tbsp Sesame Seeds.
