Ingredients

  • 3 cups Gluten-free all-purpose flour blend
  • 1 tsp Baking soda
  • 1 tsp Salt
  • 1.5 cups Buttermilk (dairy-free option available)
  • 1 cup Cheddar cheese, shredded
  • 2 tbsp Fresh rosemary, chopped
  • 2 tbsp Fresh thyme, chopped

Instructions

  1. 1Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. 2In a large bowl, whisk together the gluten-free flour blend, baking soda, and salt.
  3. 3Stir in the cheddar cheese, rosemary, and thyme.
  4. 4Make a well in the center of the dry ingredients and pour in the buttermilk. Stir until just combined. The dough will be sticky.
  5. 5Turn the dough out onto a lightly floured surface (use gluten-free flour). Gently shape into a round loaf.
  6. 6Place the loaf on the prepared baking sheet. Cut a deep cross into the top of the loaf.
  7. 7Bake for 35-40 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  8. 8Let cool slightly before slicing and serving.
