Ingredients

  • 1 lb Pickled herring, drained and diced
  • 2 cups Cooked potatoes, diced
  • 1 Apple, diced
  • 1/2 cup Red onion, finely chopped
  • 1/2 cup Plain dairy-free yogurt
  • 1 tbsp Dijon mustard
  • 1 tbsp Lemon juice
  • 2 tbsp Fresh dill, chopped
  • 1/4 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1In a large bowl, combine the 1 lb of pickled herring, diced; the 2 cups of cooked potatoes, diced; the 1 apple, diced; and the 1/2 cup of red onion, finely chopped.
  2. 2In a separate medium bowl, whisk together the 1/2 cup of plain dairy-free yogurt, 1 tablespoon of Dijon mustard, 1 tablespoon of lemon juice, 2 tablespoons of fresh dill, chopped; 1/4 teaspoon of salt, and 1/4 teaspoon of black pepper until smooth.
  3. 3Pour the yogurt dressing mixture over the herring and potato mixture in the large bowl and mix gently with a spoon until everything is evenly coated.
  4. 4Cover the bowl with plastic wrap and refrigerate for at least 30 minutes. This allows the flavors to blend together, making the salad taste even better.
  5. 5Serve the gluten-free herring salad chilled.
