Gluten-Free Haupia Bites

Ingredients

  • 2 cans Coconut milk
  • 1/2 cup Sugar
  • 1/4 cup Tapioca starch
  • 1 tsp Vanilla extract

Instructions

  1. 1In a medium saucepan, combine the 2 cans of coconut milk, 1/2 cup of sugar, and 1/4 cup of tapioca starch. Whisk these ingredients together until the mixture is completely smooth and there are no lumps of tapioca starch visible.
  2. 2Place the saucepan over medium heat, aiming for a temperature of approximately 325-350°F (160-175°C) if using a thermometer. Cook the mixture for 10-15 minutes, stirring constantly with a whisk or spoon, until it visibly thickens and coats the back of a spoon, leaving a clear path when a finger is drawn across it.
  3. 3Remove the saucepan from the heat. Stir in the 1 tsp of vanilla extract until it is fully incorporated into the thickened mixture.
  4. 4Carefully pour the hot mixture into an 8x8 inch pan. Allow the pan to sit at room temperature for 15-20 minutes to cool slightly before refrigerating.
  5. 5Transfer the pan to the refrigerator. Chill for at least 2 hours, or until the haupia is completely firm to the touch and set throughout.
  6. 6Once firm, remove the haupia from the refrigerator. Cut the haupia into 1-inch bite-sized squares and serve immediately.
