Ingredients

  • 1 lb Chicken, bone-in pieces
  • 1 cup Cracked Corn (or Rice)
  • 1 medium Onion, chopped
  • 6 cups Chicken Broth
  • 2 tablespoons Ghee (Clarified Butter)
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Salt
  • 1/2 teaspoon Black Pepper

Instructions

  1. 1In a large pot, combine chicken pieces, cracked corn (or rice), chopped onion, chicken broth, ghee, cumin, coriander, salt, and black pepper.
  2. 2Bring the mixture to a boil, then reduce heat to low, cover, and simmer for 1.5 to 2 hours, or until the chicken is very tender and the cracked corn (or rice) has broken down.
  3. 3Remove the chicken pieces from the pot. Shred the chicken meat and discard the bones.
  4. 4Return the shredded chicken to the pot and stir well to combine.
  5. 5Use an immersion blender or a regular blender (in batches) to blend the mixture until smooth and creamy.
  6. 6Adjust seasoning to taste. Serve hot, garnished with extra ghee if desired.
