Gluten-Free Hainanese Chicken Salad with Ginger-Lime Dressing

Ingredients

  • 2 large Chicken breasts
  • 2 inches Ginger
  • 4 cloves Garlic
  • 3 stalks Green onions
  • 8 cups Mixed greens
  • 1 medium Cucumber
  • 3 tablespoons Lime juice
  • 2 tablespoons Coconut aminos
  • 1 teaspoon Sesame oil
  • 1 tablespoon Rice vinegar

Instructions

  1. 1Poach chicken breasts in water with 1 inch of ginger and 2 cloves of garlic for about 20 minutes, or until cooked through. Shred or slice the chicken.
  2. 2Prepare the dressing: Mince the remaining ginger and garlic. Combine with lime juice, coconut aminos, sesame oil, and rice vinegar.
  3. 3Slice cucumber and green onions.
  4. 4In a large bowl, combine mixed greens, sliced cucumber, sliced or shredded chicken, and green onions.
  5. 5Drizzle with ginger-lime dressing and toss gently to coat.
  6. 6Serve immediately.
