Ingredients

  • 1 whole (about 3 lbs) Chicken
  • 12 cups Water
  • 4 slices Ginger
  • 4 stalks Green onions
  • 2 tsp Sea Salt
  • 2 cups Gluten-Free Long Grain Rice
  • 4 cups Chicken broth
  • 4 cloves Garlic
  • 1 tbsp Sesame oil
  • 2 tbsp minced Fresh Ginger
  • 2 tbsp Rice vinegar
  • 2 tbsp Soy sauce (Gluten-Free)
  • 2 tbsp Chili sauce
  • 1 tsp Sugar

Instructions

  1. 1Place the 1 whole (about 3 lbs) Chicken into a large pot. Add the 12 cups Water, 4 slices Ginger, 4 stalks Green onions, and 2 tsp Sea Salt to the pot. Bring the water to a rolling boil (212°F/100°C) over high heat, then reduce the heat to low, cover the pot tightly, and simmer for 40-45 minutes, or until the chicken's internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  2. 2Carefully remove the cooked chicken from the pot and place it on a clean plate to cool for at least 15 minutes; this helps the chicken retain its moisture. While the chicken cools, strain the poaching liquid through a fine-mesh sieve into a heatproof bowl or container, discarding the ginger slices and green onions, then measure out 4 cups of the strained chicken broth and set it aside.
  3. 3While the chicken cools, rinse the 2 cups Gluten-Free Long Grain Rice thoroughly under cold running water until the water runs clear. In a medium pot (e.g., a 2-quart saucepan), combine the rinsed 2 cups Gluten-Free Long Grain Rice with the reserved 4 cups Chicken broth. Bring the mixture to a boil (212°F/100°C) over high heat, then reduce the heat to low, cover the pot tightly, and simmer for 18-20 minutes, or until the rice is tender and all the liquid has been absorbed.
  4. 4While the rice cooks, prepare the ginger-garlic sauce. Mince the 4 cloves Garlic very finely. In a small bowl, combine the minced 4 cloves Garlic, 2 tbsp minced Fresh Ginger, 1 tbsp Sesame oil, 2 tbsp Rice vinegar, 2 tbsp Gluten-Free Soy sauce, and 1 tsp Sugar; stir well until all ingredients are thoroughly combined.
  5. 5Once the chicken is cool enough to handle, remove the skin and bones, then shred the chicken meat into bite-sized pieces using two forks or your hands. Fluff the cooked Gluten-Free Long Grain Rice with a fork, then serve the shredded chicken meat over individual portions of the fragrant rice, drizzling each serving with the prepared Ginger-Garlic Sauce and 2 tbsp Chili sauce to your preference.
