Gluten-Free Hainanese Chicken Rice

A simplified, gluten-free version of the classic Singaporean dish, Hainanese Chicken Rice, made without egg and perfect for a weeknight dinner.

Ingredients

  • 1.5 lbs Chicken thighs
  • 2 tablespoons Gluten-free soy sauce
  • 2 inches Ginger
  • 4 cloves Garlic
  • 6 cups Chicken broth
  • 2 cups Jasmine rice
  • 1 tablespoon Sesame oil
  • 2 stalks Scallions
  • 1 medium Cucumber

Instructions

  1. 1In a pot, combine chicken thighs, ginger, garlic, and 4 cups of chicken broth. Bring to a boil, then reduce heat and simmer for 30 minutes, or until chicken is cooked through.
  2. 2Remove chicken from the pot and set aside to cool. Reserve the broth.
  3. 3Shred the cooled chicken and toss with gluten-free soy sauce and sesame oil.
  4. 4In the same pot, add jasmine rice and the remaining 2 cups of chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until rice is cooked and liquid is absorbed.
  5. 5Slice cucumber and scallions for garnish.
  6. 6Serve shredded chicken over rice, garnished with cucumber and scallions.
