Ingredients

  • 1 lb Chicken Pieces
  • 1 cup Groundnut Paste (Peanut Butter)
  • 2 medium Tomatoes
  • 1 medium Red Onion
  • 1 tbsp Ginger
  • 2 cloves Garlic
  • 1/2 tsp Scotch Bonnet Pepper
  • 1 tsp Salt
  • 6 cups Water
  • 1 cup Plantain Flour
  • 1/2 cup Cassava Flour

Instructions

  1. 1In a pot, combine the chicken pieces, chopped tomatoes, chopped red onion, grated ginger, minced garlic, minced scotch bonnet pepper, and salt.
  2. 2Add water and bring to a boil. Reduce heat and simmer for 30 minutes, or until the chicken is tender.
  3. 3Remove the chicken from the pot and set aside. Shred the chicken meat from the bones and discard the bones.
  4. 4Add the groundnut paste to the pot and stir well to dissolve. Simmer for another 15 minutes, stirring occasionally to prevent sticking.
  5. 5Return the shredded chicken to the pot and simmer for 5 minutes.
  6. 6In a separate bowl, mix the plantain flour and cassava flour with enough water to form a smooth, pliable dough.
  7. 7Bring a pot of water to a boil. Drop spoonfuls of the fufu dough into the boiling water.
  8. 8Cook the fufu dumplings for 10-12 minutes, or until they float to the surface and are cooked through.
  9. 9Serve the groundnut soup hot with the fufu dumplings.
