Gluten-Free Golubtsi (Cabbage Rolls) with Tomato Sauce

Cabbage rolls stuffed with a flavorful mixture of ground meat and rice, simmered in a rich tomato sauce. Made gluten-free by using cauliflower rice.

Ingredients

  • 1 large Green cabbage
  • 1 lb Ground beef
  • 1 cup Cauliflower rice
  • 1 Onion, chopped
  • 3 cloves Garlic, minced
  • 1 Egg
  • 2 cups Tomato sauce
  • 2 tbsp Tomato paste
  • 1 cup Vegetable broth
  • 1 tbsp Dried dill
  • 1.5 tsp Salt
  • 0.75 tsp Black pepper

Instructions

  1. 1Bring a large pot of water to a boil over high heat. Carefully peel the outer leaves from the 1 large Green cabbage, one by one. Submerge the leaves in the boiling water for 2-3 minutes until they are softened and pliable. Remove the softened leaves from the water and set them aside to cool slightly.
  2. 2In a large bowl, combine the 1 lb Ground beef, 1 cup Cauliflower rice, 1 Onion (chopped), 3 cloves Garlic (minced), 1 Egg, 1.5 tsp Salt, and 0.75 tsp Black pepper. Mix these ingredients together with your hands or a spoon until they are well combined.
  3. 3Lay one of the softened cabbage leaves flat. Place about 2-3 tablespoons of the meat mixture in the center of the leaf. Fold the left and right sides of the cabbage leaf inward over the filling, then tightly roll the leaf up from the bottom to create a compact roll. Repeat this process with the remaining cabbage leaves and meat mixture.
  4. 4Arrange the formed cabbage rolls seam-side down in a large pot or Dutch oven. Pour the 2 cups Tomato sauce and 2 tbsp Tomato paste over the cabbage rolls. Add the 1 cup Vegetable broth, ensuring it mostly covers the rolls.
  5. 5Place the pot over medium-high heat and bring the liquid to a simmer. Once simmering, reduce the heat to low, cover the pot tightly, and cook for 60 minutes. Check for doneness by ensuring the cabbage is tender when pierced with a fork and the internal temperature of the meat mixture reaches 160°F (71°C).
  6. 6Remove the pot from the heat and let the golubtsi rest, covered, for 5-10 minutes. This allows the flavors to meld and the rolls to firm up slightly. Stir in the 1 tbsp Dried dill just before serving.
  7. 7Serve the Gluten-Free Golubtsi hot. Garnish with additional fresh dill if desired.
