Gluten-Free German Farmer's Omelet (Bauernomelett)

Ingredients

  • 8 large Eggs
  • 4 slices Bacon, diced
  • 2 cups Potatoes, cooked and diced
  • 1/2 cup Onion, chopped
  • 2 tbsp Chives, chopped
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 1 tbsp Oil

Instructions

  1. 1In a medium bowl, combine the 8 large Eggs, 1/2 tsp Salt, and 1/4 tsp Black Pepper. Whisk them together until the egg yolks and whites are fully combined and slightly frothy.
  2. 2Heat a 10-inch or 12-inch oven-safe skillet over medium heat (300-325°F / 150-163°C). Add the 4 slices of diced Bacon to the hot skillet and cook, stirring occasionally, for 5-8 minutes until the bacon is crispy and golden brown. Use a slotted spoon to remove the cooked bacon and transfer it to a small bowl, leaving the rendered bacon fat in the pan.
  3. 3Add the 1 tbsp Oil to the skillet with the reserved bacon fat, if needed, to ensure there is enough fat to cook the vegetables without sticking. Add the 1/2 cup of chopped Onion to the skillet and sauté over medium heat (300-325°F / 150-163°C) for 3-5 minutes, stirring occasionally, until the onions are softened and translucent. Then, add the 2 cups of cooked and diced Potatoes and continue to cook for 5-7 minutes, stirring occasionally, until the potatoes are lightly browned and heated through.
  4. 4Pour the whisked egg mixture evenly over the potatoes and onions in the skillet. Reduce the heat to medium-low (250-275°F / 120-135°C) and cook for 8-10 minutes, without stirring, until the edges of the omelet are set and the bottom is lightly golden, but the center is still slightly wet.
  5. 5Preheat your oven broiler to high. Sprinkle the cooked 4 slices of diced Bacon and the 2 tbsp of chopped Chives evenly over the top of the omelet. Carefully transfer the skillet to the preheated broiler and broil for 2-4 minutes, watching closely, until the top of the omelet is fully set and lightly golden brown.
  6. 6Carefully remove the skillet from the broiler. Let the omelet rest in the skillet for 2 minutes before cutting it into 4 equal wedges. Serve immediately.
