Ingredients

  • 2 cups Daikon Radish (shredded)
  • 1 cup Rice Flour
  • 0.25 cup Tapioca Starch
  • 1.5 cups Water
  • 0.25 cup Dried Shrimp (soaked)
  • 0.5 cup Chinese Sausage (lup cheong)
  • 2 large Eggs
  • 2 cloves Garlic (minced)
  • 2 tbsp Sweet Soy Sauce
  • 1 tbsp Fish Sauce
  • 2 tbsp Vegetable Oil

Instructions

  1. 1In a large bowl, combine the 2 cups of shredded Daikon Radish, 1 cup of Rice Flour, and 0.25 cup of Tapioca Starch. Gradually add the 1.5 cups of Water while mixing until you have a smooth batter. Pour this batter into a greased steamer or a pan that fits inside your steamer. Steam over medium-high heat for 30 minutes, or until the cake is firm to the touch. Let it cool completely on a wire rack, then cut into 1-inch cubes.
  2. 2While the radish cake is cooling, prepare the other ingredients. Finely mince the 2 cloves of Garlic. Chop the 0.5 cup of Chinese Sausage into small pieces. Ensure the 0.25 cup of Dried Shrimp has been soaked according to its usual preparation.
  3. 3Heat 1 tablespoon of Vegetable Oil in a large non-stick skillet or wok over medium-high heat (around 375°F or 190°C). Add the 2 cloves of minced Garlic, the 0.25 cup of soaked Dried Shrimp, and the 0.5 cup of Chinese Sausage. Stir-fry for 2-3 minutes until the garlic is fragrant and the sausage is lightly browned.
  4. 4Add the cubed radish cake to the skillet. Continue to stir-fry for 5-7 minutes, turning the cubes occasionally, until they are lightly browned and slightly crispy on the edges.
  5. 5Push the radish cake mixture to one side of the skillet. Add the remaining 1 tablespoon of Vegetable Oil to the empty side of the skillet. Crack the 2 large Eggs into the oiled side and lightly scramble them until they are just set, about 1-2 minutes.
  6. 6Gently mix the scrambled eggs with the radish cake mixture. Stir in the 2 tablespoons of Sweet Soy Sauce and 1 tablespoon of Fish Sauce, ensuring everything is evenly coated. Cook for another 1-2 minutes until the sauces are absorbed and the mixture is heated through.
  7. 7Serve the Gluten-Free Fried Radish Cake hot.
