Ingredients

  • 1 cup Dried Chickpeas
  • 1/2 cup Chickpea Flour (Besan)
  • 1/4 cup Fresh Parsley
  • 1/4 cup Fresh Cilantro
  • 1/2 Onion
  • 2 cloves Garlic
  • 1 tsp Cumin
  • 1 tsp Coriander
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • For frying Olive Oil
  • 1/4 cup Tahini
  • 2 tbsp Lemon Juice
  • 2-3 tbsp Water

Instructions

  1. 1Soak the dried chickpeas in water for at least 8 hours or overnight.
  2. 2Drain and rinse the chickpeas thoroughly.
  3. 3In a food processor, combine the chickpeas, chickpea flour, parsley, cilantro, onion, garlic, cumin, coriander, baking soda, salt, and pepper.
  4. 4Process until the mixture is finely ground but still has some texture.
  5. 5Form the mixture into small balls or patties.
  6. 6Heat olive oil in a deep skillet or pot over medium-high heat.
  7. 7Carefully fry the falafel until golden brown and crispy on all sides, about 3-5 minutes.
  8. 8Remove the falafel with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
  9. 9For the tahini sauce, whisk together the tahini, lemon juice, and water in a small bowl until smooth.
  10. 10Serve the falafel bites warm with the tahini dipping sauce.
