Gluten-Free Empanadas with Ground Beef Filling

Ingredients

  • 1 lb Ground beef
  • 1 medium Onion
  • 1/2 medium Red bell pepper
  • 2 cloves Garlic
  • 2 large Hard-boiled eggs
  • 1/4 cup Green olives
  • 1/4 cup Raisins
  • 1 tsp Smoked paprika
  • 1/2 tsp Cumin
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 cups Gluten-free flour blend
  • 1/2 cup Butter
  • 1 large Egg

Instructions

  1. 1Preheat oven to 375°F (190°C).
  2. 2In a large skillet, cook ground beef over medium heat until browned. Drain excess fat.
  3. 3Add onion and bell pepper to the skillet and cook until softened, about 5 minutes.
  4. 4Add garlic, smoked paprika, cumin, salt, and pepper. Cook for 1 minute more.
  5. 5Stir in chopped hard-boiled eggs, chopped green olives, and raisins.
  6. 6In a separate bowl, combine gluten-free flour and butter. Cut in butter until mixture resembles coarse crumbs.
  7. 7Add egg and mix until a dough forms. Wrap dough in plastic wrap and refrigerate for 30 minutes.
  8. 8Roll out dough on a lightly floured surface and cut out circles using a cookie cutter or bowl.
  9. 9Place a spoonful of ground beef filling in the center of each circle. Fold over to form a half-moon shape and crimp the edges to seal.
  10. 10Place empanadas on a baking sheet lined with parchment paper.
  11. 11Bake for 25-30 minutes, or until golden brown.
  12. 12Serve warm.
