Gluten-Free Egyptian Fava Bean Stew (Ful Medames)

A traditional Egyptian breakfast or dinner dish of stewed fava beans, seasoned with cumin, lemon juice, and olive oil, adapted to be gluten-free.

Ingredients

  • 1 cup Dried Fava Beans
  • 6 cups Water
  • 4 cloves Garlic
  • 4 tablespoons Lemon Juice
  • 4 tablespoons Olive Oil
  • 1 teaspoon Cumin
  • 1 teaspoon Hot Sauce
  • 1 teaspoon Salt
  • 0.25 cup Fresh Parsley

Instructions

  1. 1Soak the fava beans in water overnight.
  2. 2Drain the fava beans and place them in a pot with 6 cups of fresh water.
  3. 3Bring to a boil, then reduce heat to low, cover, and simmer for 1.5 - 2 hours, or until the beans are very tender.
  4. 4Mash some of the beans with a fork to create a creamy texture.
  5. 5Stir in minced garlic, lemon juice, olive oil, cumin, hot sauce, and salt.
  6. 6Garnish with fresh parsley and serve hot.
