Ingredients

  • 1/2 cup Tapioca Flour
  • 1/4 cup Brown Rice Flour
  • 1/4 cup Potato Starch
  • 3 Eggs
  • 1 cup Milk
  • 2 tbsp Sugar
  • 1/4 tsp Salt
  • 2 tbsp Butter
  • 2 Apples (peeled, cored, and sliced)
  • 1 tsp Cinnamon

Instructions

  1. 1Preheat your oven to 425°F (220°C).
  2. 2In a blender, combine the 1/2 cup tapioca flour, 1/4 cup brown rice flour, 1/4 cup potato starch, 3 eggs, 1 cup milk, 2 tablespoons sugar, and 1/4 teaspoon salt. Blend until the mixture is completely smooth.
  3. 3Melt the 2 tablespoons of butter in a 10-inch oven-safe skillet over medium heat. Add the 2 sliced apples and 1 teaspoon cinnamon to the skillet. Cook for 5 to 7 minutes, stirring occasionally, until the apples are slightly softened.
  4. 4Pour the blended batter evenly over the softened apples in the skillet.
  5. 5Carefully transfer the skillet to the preheated oven.
  6. 6Bake for 20 to 25 minutes, or until the pancake is puffed up and the top is golden brown.
  7. 7Remove the skillet from the oven and let the pancake cool slightly for about 5 minutes before slicing and serving.
