Ingredients

  • 1 cup Soybeans
  • 6 cups Water
  • to taste Sugar (Optional)

Instructions

  1. 1Soak soybeans in water for at least 8 hours or overnight.
  2. 2Drain and rinse the soaked soybeans.
  3. 3Combine the soaked soybeans and fresh water in a blender.
  4. 4Blend until smooth.
  5. 5Strain the mixture through a cheesecloth or nut milk bag to remove the pulp.
  6. 6Pour the strained soybean milk into a pot and bring to a boil over medium heat.
  7. 7Reduce heat and simmer for 10-15 minutes, skimming off any foam that forms.
  8. 8Add sugar to taste, if desired.
  9. 9Serve hot or cold.
