Ingredients

  • 1 cup Soybeans, dried
  • 8 cups Water
  • 2-4 tablespoons Sugar (adjust to taste)
  • 1 teaspoon Vinegar (for curdling, optional)
  • 1/2 piece Gluten-Free Youtiao (optional)
  • 1 tablespoon Dried Shrimp (optional)
  • 1 tablespoon Green Onions, chopped (optional)

Instructions

  1. 1Rinse the dried soybeans and soak them in water for at least 8 hours or overnight.
  2. 2Drain the soaked soybeans and blend them with 4 cups of fresh water until smooth.
  3. 3Strain the mixture through a cheesecloth or nut milk bag to remove the pulp (okara).
  4. 4In a large pot, bring the strained soy milk to a boil over medium heat. Reduce heat and simmer for 15-20 minutes, skimming off any foam that forms on the surface.
  5. 5Sweeten with sugar to taste.
  6. 6If desired, add vinegar to curdle the soy milk for a savory version.
  7. 7Serve hot or cold, with gluten-free youtiao, dried shrimp, and green onions as toppings (optional).
