Ingredients

  • 2 cups Gluten-Free All-Purpose Flour Blend
  • 2 1/4 tsp Active Dry Yeast
  • 1 cup Warm Milk (dairy or non-dairy)
  • 1/4 cup Sugar
  • 1 Egg
  • 1/4 cup Melted Butter (dairy or non-dairy)
  • 1/2 tsp Salt
  • 1/2 cup Water
  • 2 tbsp Butter (for pan)
  • 1 package Vanilla Pudding Mix (instant)
  • 2 cups Milk (for pudding)

Instructions

  1. 1In a large bowl, combine the 2 1/4 tsp Active Dry Yeast with 1 cup Warm Milk and 1 tsp of the 1/4 cup Sugar. Let this mixture stand for 5 minutes, or until it becomes foamy.
  2. 2To the foamy yeast mixture, add the remaining 1/4 cup Sugar, the 1 Egg, the 1/4 cup Melted Butter, and the 1/2 tsp Salt. Mix everything together thoroughly.
  3. 3Gradually add the 2 cups Gluten-Free All-Purpose Flour Blend to the wet ingredients. Stir until a soft, cohesive dough forms.
  4. 4Cover the bowl with a clean cloth or plastic wrap. Place it in a warm, draft-free spot for about 1 hour, or until the dough has visibly doubled in size.
  5. 5Gently punch down the risen dough. Divide it into 8 equal portions. Roll each portion into a smooth, round ball to form the dumplings.
  6. 6Place 2 tbsp Butter into a large, heavy-bottomed skillet with a tight-fitting lid. Heat the skillet over medium heat (about 350°F or 175°C) until the butter is melted and shimmering.
  7. 7Carefully arrange the 8 round dumplings in the melted butter in the skillet, ensuring they have a little space between them. Pour the 1/2 cup Water around the sides of the dumplings, being careful not to pour it directly over them. Immediately cover the skillet tightly with its lid.
  8. 8Cook the dumplings over medium heat (about 350°F or 175°C) for 20-25 minutes. Do not lift the lid during this time. The dumplings are done when they are puffed up, cooked through, and the bottoms are golden brown.
  9. 9While the Dampfnudeln are cooking, prepare the vanilla sauce. In a medium bowl, whisk together the 1 package Vanilla Pudding Mix with 2 cups Milk until smooth. Let it sit for 5 minutes to thicken.
  10. 10Carefully remove the Dampfnudeln from the skillet. Serve them warm with the prepared vanilla sauce.
