Ingredients

  • 1.5 lb Chicken Breast
  • 1 cup Plain Yogurt (Dairy or Coconut)
  • 4 tbsp Tikka Masala Paste
  • 2 tbsp Lemon Juice
  • 2 tbsp Ghee or Coconut Oil
  • 1 medium Onion
  • 4 cloves Garlic
  • 1 inch Ginger
  • 1 can Crushed Tomatoes
  • 1 can Coconut Milk
  • 1/4 cup Cilantro
  • 1 head Cauliflower

Instructions

  1. 1Cut chicken into bite-sized pieces and marinate in yogurt, tikka masala paste, and lemon juice for at least 30 minutes.
  2. 2Heat ghee or coconut oil in a large pan or pot over medium heat. Add chopped onion and sauté until golden brown.
  3. 3Add minced garlic and grated ginger to the pan and cook for another minute until fragrant.
  4. 4Add the marinated chicken to the pan and cook until browned on all sides.
  5. 5Pour in crushed tomatoes and coconut milk. Bring to a simmer and cook for 20 minutes, stirring occasionally, until the sauce has thickened and the chicken is cooked through.
  6. 6While the chicken simmers, rice the cauliflower using a food processor or grater.
  7. 7Steam the cauliflower rice for 5-7 minutes until tender.
  8. 8Stir in chopped cilantro into the chicken tikka masala.
  9. 9Serve the Chicken Tikka Masala over the cauliflower rice.
