Ingredients

  • 1 tablespoon Olive Oil
  • 1.5 pounds Chicken Breast
  • 1 medium Onion
  • 1 medium Bell Pepper
  • 1 cup Corn Kernels
  • 1 can Black Beans
  • 1 can Enchilada Sauce
  • 2 cups Corn Tortilla Chips
  • 1 cup Shredded Cheddar Cheese
  • 0.25 cup Cilantro

Instructions

  1. 1Heat olive oil in a large skillet over medium-high heat.
  2. 2Add chicken and cook until browned and cooked through. Remove from skillet and set aside.
  3. 3Add onion and bell pepper to the skillet and cook until softened.
  4. 4Stir in corn kernels, black beans, and enchilada sauce.
  5. 5Bring to a simmer and then add the cooked chicken.
  6. 6Top with corn tortilla chips and shredded cheddar cheese.
  7. 7Cover and cook until cheese is melted.
  8. 8Garnish with cilantro and serve.
