Ingredients

  • 1 lb Shrimp
  • 1 cup Stone-ground Grits
  • 3 cups Chicken Broth
  • 1 cup Sharp Cheddar Cheese
  • 4 tbsp Butter
  • 1 medium Onion
  • 1 medium Green Bell Pepper
  • 4 cloves Garlic
  • 2 tbsp Cajun Seasoning
  • 1 tsp Hot Sauce
  • 2 tbsp Green Onions

Instructions

  1. 1In a saucepan, bring chicken broth to a boil. Gradually whisk in grits, reduce heat to low, and simmer for 20-25 minutes, stirring frequently, until thickened and creamy.
  2. 2Stir in cheddar cheese and 2 tablespoons of butter until melted and smooth. Season with salt and pepper to taste.
  3. 3While grits are cooking, melt remaining 2 tablespoons of butter in a large skillet over medium heat. Add onion and bell pepper and cook until softened, about 5 minutes.
  4. 4Add garlic and Cajun seasoning and cook for 1 minute more, until fragrant.
  5. 5Add shrimp and cook until pink and opaque, about 3-5 minutes. Stir in hot sauce.
  6. 6Spoon grits into bowls and top with Cajun shrimp. Garnish with green onions.
