Ingredients

  • 8 ounces Black Pudding
  • 2 medium Potatoes
  • 1 large Apple
  • 1/2 medium Onion
  • 2 tablespoons Olive Oil
  • 1 teaspoon Fresh Thyme
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black Pepper

Instructions

  1. 1Prepare your ingredients: Cut the 8 ounces of black pudding into 1/2-inch cubes. Peel and cut the 2 medium potatoes into 1/2-inch cubes. Core and cut the 1 large apple into 1/2-inch cubes. Peel and finely chop the 1/2 medium onion.
  2. 2Heat 2 tablespoons of olive oil in a large 12-inch skillet over medium heat, which is about 350°F (175°C).
  3. 3Add the chopped 1/2 medium onion and the cubed 2 medium potatoes to the hot skillet. Cook, stirring occasionally, for 5 minutes, or until the potatoes begin to soften slightly.
  4. 4Add the cubed 8 ounces of black pudding and the cubed 1 large apple to the skillet. Continue to cook, stirring occasionally, for another 5 to 7 minutes. The black pudding should be heated through and the apple should be tender.
  5. 5Stir in 1 teaspoon of fresh thyme, 1/2 teaspoon of salt, and 1/4 teaspoon of black pepper. Cook for 1 more minute, stirring to combine everything.
