Gluten-Free Beef Rouladen with Red Cabbage

Ingredients

  • 1.5 lb Beef Round Steak
  • 4 slices Bacon
  • 1 large Onion
  • 4 small Dill Pickles
  • 2 tbsp Dijon Mustard
  • 2 cups Beef Broth
  • 2 tbsp Tapioca Starch
  • 1 medium Red Cabbage
  • 1/4 cup Apple Cider Vinegar
  • 2 tbsp Brown Sugar
  • 2 tbsp Olive Oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper

Instructions

  1. 1Place the 1.5 lb Beef Round Steak slices flat on a clean surface. Spread a thin layer of the 2 tbsp Dijon Mustard on one side of each beef slice.
  2. 2On top of the mustard on each beef slice, place 1 slice of Bacon, a few slices of the 1 large Onion, and 1 of the 4 small Dill Pickles. Roll each beef slice up tightly around the filling and secure each roll with toothpicks or kitchen twine.
  3. 3Heat the 2 tbsp Olive Oil in a large Dutch oven or heavy-bottomed pot over medium-high heat (400°F / 200°C). Carefully place the beef rolls into the hot oil and brown them on all sides, about 2-3 minutes per side, until they have a nice brown crust.
  4. 4Remove the browned beef rolls from the pot and set them aside on a plate. Add the remaining onion to the pot and cook, stirring frequently, until softened, about 5-7 minutes.
  5. 5Sprinkle the 2 tbsp Tapioca Starch over the softened onion and stir constantly for 1 minute to cook it slightly. Gradually whisk in the 2 cups Beef Broth, scraping the bottom of the pot with your whisk to loosen any browned bits. Bring the mixture to a simmer.
  6. 6Return the browned beef rolls to the pot, nestling them into the liquid. Cover the pot, reduce the heat to low, and let the beef rolls simmer gently for 1.5 to 2 hours, or until the beef is very tender when pierced with a fork. The internal temperature should reach at least 165°F (74°C).
  7. 7While the beef is simmering, prepare the red cabbage. Shred the 1 medium Red Cabbage. In a separate medium pot, combine the shredded red cabbage, 1/4 cup Apple Cider Vinegar, 2 tbsp Brown Sugar, 1 tsp Salt, and 1/2 tsp Black Pepper. Cook over medium heat (350°F / 175°C), stirring occasionally, until the cabbage is tender and the liquid has reduced, about 20-30 minutes.
  8. 8Serve the tender beef rolls with the braising gravy spooned over them, alongside the prepared red cabbage.
