Ingredients

  • 1 lb Beef sirloin, cubed
  • 1 Red bell pepper, cubed
  • 1 Yellow bell pepper, cubed
  • 1 Zucchini, cubed
  • 1 Red onion, quartered
  • 1/2 cup Gluten-free BBQ sauce(replaces Regular BBQ sauce)
  • 2 tbsp Tamari (gluten-free soy sauce)
  • 1 tbsp Honey
  • 2 cloves Garlic, minced
  • 1 tbsp Olive oil
  • to taste Salt and pepper

Instructions

  1. 1In a medium bowl, whisk together the 1/2 cup gluten-free BBQ sauce, 2 tbsp tamari, 1 tbsp honey, 2 cloves minced garlic, and 1 tbsp olive oil. Season this mixture with salt and pepper to your liking.
  2. 2Add the 1 lb beef sirloin cubes to the bowl with the marinade. Toss gently to make sure all the beef cubes are coated. Cover the bowl and place it in the refrigerator to marinate for at least 30 minutes, or up to 2 hours.
  3. 3While the beef is marinating, prepare your vegetables. Cut the 1 red bell pepper into 1-inch cubes. Cut the 1 yellow bell pepper into 1-inch cubes. Cut the 1 zucchini into 1-inch cubes. Cut the 1 red onion into 1-inch pieces (quarters are fine if they are bite-sized).
  4. 4Preheat your grill to medium-high heat, which is about 400-450°F (200-230°C).
  5. 5Thread the marinated beef cubes and the prepared vegetable pieces onto skewers. Alternate the ingredients on each skewer, placing pieces of beef, red bell pepper, yellow bell pepper, zucchini, and red onion.
  6. 6Place the assembled skewers on the preheated grill. Cook for 10-15 minutes, turning the skewers every few minutes, until the beef is cooked through to your desired doneness (an internal temperature of 145°F or 63°C for medium-rare) and the vegetables are tender but still have a slight crispness.
  7. 7During the last 2-3 minutes of grilling, brush the skewers with any remaining BBQ glaze. This will help create a nice glaze on the outside.
  8. 8Remove the skewers from the grill and let them rest on a clean plate for 3-5 minutes before serving. This allows the juices in the beef to redistribute, making it more tender.
