Ingredients

  • 1.5 lb Chicken breasts
  • 1 cup Gluten-free rice
  • 2 cups Chicken broth
  • 1 medium Onion
  • 1 medium Red bell pepper
  • 3 cloves Garlic
  • 2 tbsp Olive oil
  • 1 tsp Smoked paprika
  • 1 tsp Oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 tbsp Fresh parsley

Instructions

  1. 1Dice the chicken into bite-sized pieces. Chop the onion and red bell pepper. Mince the garlic.
  2. 2Heat olive oil in a large skillet over medium heat.
  3. 3Add the chicken and cook until browned on all sides.
  4. 4Add the onion, red bell pepper, and garlic to the skillet and cook until softened.
  5. 5Stir in the smoked paprika, oregano, salt, and pepper.
