Ingredients

  • 3 cups Sweet corn kernels (fresh or frozen)
  • 2 cups Coconut milk
  • 1 cup Water
  • 1/4 cup Sugar
  • 2 tablespoons Sweet rice (optional, for thickening)
  • 1 pinch Pinch of salt

Original measure retained: its cup/spoon or fluid-volume standard is unspecified.

Instructions

  1. 1If you are using the 2 tablespoons of sweet rice, place it in a small bowl and cover it with water. Let it soak for at least 30 minutes.
  2. 2In a large heavy-bottomed pot, combine the 3 cups of sweet corn kernels, 2 cups of coconut milk, and 1 cup of water.
  3. 3Place the pot over medium-high heat and bring the mixture to a rolling boil. Once boiling, immediately reduce the heat to low, cover the pot, and let it simmer gently for 15 minutes. The corn should become tender.
  4. 4If you soaked the sweet rice, drain it thoroughly. Add the drained 2 tablespoons of sweet rice to the pot. Continue to simmer for another 5 minutes, stirring occasionally. The soup will begin to thicken slightly.
  5. 5Stir in the 1/4 cup of sugar and the 1 pinch of salt until they are fully dissolved.
  6. 6Serve the Ginataang Mais hot or warm.
