Ingredients

  • 2 cups Squash (cubed)
  • 1 cup Long beans (cut into 2-inch pieces)
  • 1/2 lb Shrimp (peeled and deveined)
  • 2 cans Coconut milk
  • 1 medium Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 tsp Ginger (minced)
  • 1 tbsp Fish sauce (optional)
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1In a large pot, sauté onion, garlic, and ginger until fragrant.
  2. 2Add coconut milk and bring to a simmer.
  3. 3Add squash and long beans. Cook until tender, about 15-20 minutes.
  4. 4Add shrimp and cook until pink, about 3-5 minutes.
  5. 5Stir in fish sauce (if using), salt, and pepper.
