Ingredients

  • 2 cups Butternut Squash
  • 1 cup Green Beans (Sitaw)
  • 2 cups Coconut Milk
  • 1/2 cup Onion
  • 3 cloves Garlic
  • 1 tbsp Ginger
  • 1 tbsp Fish Sauce
  • 1/2 cup Vegetable Broth
  • 1 tbsp Olive Oil

Instructions

  1. 1Place a large heavy-bottomed pot over medium heat, which is about 350°F (175°C). Add the 1 tablespoon of olive oil.
  2. 2Add the 3 cloves of garlic, the 1/2 cup of onion, and the 1 tablespoon of ginger to the pot. Cook, stirring often, until they are softened and smell fragrant, about 3 to 5 minutes.
  3. 3Add the 2 cups of butternut squash and the 1 cup of green beans to the pot. Cook, stirring occasionally, for 5 minutes.
  4. 4Pour in the 2 cups of coconut milk and the 1/2 cup of vegetable broth. Stir everything together and bring the liquid to a gentle simmer, which is when small bubbles appear around the edges of the pot.
  5. 5Stir in the 1 tablespoon of fish sauce. Reduce the heat to low, cover the pot, and cook until the 2 cups of butternut squash are tender when poked with a fork, about 15 to 20 minutes. The green beans should also be tender-crisp.
  6. 6Serve the Ginataang Kalabasa at Sitaw hot.
