Ingredients

  • 8 sheets Rice paper wrappers
  • 8 oz Cooked shrimp
  • 4 oz Rice vermicelli noodles
  • 1/2 cup Fresh mint
  • 1/2 cup Fresh cilantro
  • 1/2 cup Shredded carrots
  • 1/2 cup Bean sprouts
  • 1/4 cup Hoisin sauce
  • 1 tbsp Soy sauce
  • 1 tbsp Rice vinegar
  • 1 clove Garlic
  • 1 tsp Sesame oil
  • 2 tbsp Water

Instructions

  1. 1Combine the 1/4 cup Hoisin sauce, 1 tbsp Soy sauce, 1 tbsp Rice vinegar, 1 minced clove Garlic, 1 tsp Sesame oil, and 2 tbsp Water in a small bowl. Whisk these ingredients together until the sauce is smooth and well combined.
  2. 2Bring a medium pot of water to a rolling boil (212°F / 100°C). Add the 4 oz rice vermicelli noodles and cook for 2-3 minutes, stirring occasionally, until the noodles are tender but still have a slight bite. Immediately drain the noodles in a colander and rinse them thoroughly with cold running water for 30 seconds to stop the cooking process and prevent them from sticking together. Let them drain completely.
  3. 3Fill a shallow dish or pie plate with warm water. Lay a clean, damp kitchen towel or cutting board on your work surface to prepare for rolling.
  4. 4Dip one sheet of rice paper wrapper into the warm water for 15-30 seconds, or until it becomes soft and pliable. Carefully remove the wrapper from the water and lay it flat on your prepared work surface. On the bottom third of the softened wrapper, arrange 1 oz of the cooked shrimp, 0.5 oz of the cooked rice vermicelli noodles, 1/16 cup of the fresh mint, 1/16 cup of the fresh cilantro, 1/16 cup of the shredded carrots, and 1/16 cup of the bean sprouts in a horizontal line.
  5. 5Fold the left and right sides of the rice paper wrapper inward over the filling. Starting from the bottom edge closest to you, tightly roll the wrapper upwards to enclose the filling completely, forming a secure roll.
  6. 6Repeat steps 4 and 5 with the remaining 7 sheets of rice paper wrappers and the rest of the prepared fillings until all 8 summer rolls are assembled. Serve the 8 Gỏi cuốn (Summer Rolls) immediately with the prepared dipping sauce on the side.
