Gỏi Cuốn (Fresh Spring Rolls) with Peanut-Free Dipping Sauce

Ingredients

  • 12 wrappers Rice paper wrappers
  • 1 lb Cooked shrimp, peeled and deveined
  • 4 oz Rice vermicelli noodles
  • 1/2 cup Fresh mint leaves
  • 1/2 cup Fresh cilantro leaves
  • 2 cups Shredded lettuce
  • 1 cup Julienned carrots
  • 1 cup Bean sprouts
  • 1/4 cup Dairy-free Hoisin sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 teaspoon Sesame oil
  • 1 clove Garlic, minced
  • 1/2 teaspoon Chili garlic sauce

Instructions

  1. 1Cook the 4 oz rice vermicelli noodles in a large pot of boiling water for 3 minutes, or until tender but still slightly firm. Drain the noodles well and rinse with cool water to stop the cooking. Set aside.
  2. 2In a small bowl, combine the 1/4 cup dairy-free hoisin sauce, 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, 1 clove minced garlic, and 1/2 teaspoon chili garlic sauce. Whisk everything together until well combined to make the dipping sauce. Set aside.
  3. 3Fill a shallow dish or pie plate with warm water, ensuring it's deep enough to submerge a rice paper wrapper. Dip one of the 12 rice paper wrappers into the warm water for about 15-20 seconds, or until it becomes pliable and soft. Carefully lift it out, letting any excess water drip off.
  4. 4Lay the softened wrapper flat on a clean, damp work surface (like a cutting board or a clean countertop). Arrange about one-twelfth of the filling ingredients in the bottom third of the wrapper: place a few pieces of the 1 lb cooked shrimp, some of the cooked vermicelli noodles, a small bunch of the 1/2 cup mint leaves, a small bunch of the 1/2 cup cilantro leaves, some of the 2 cups shredded lettuce, a few strips of the 1 cup julienned carrots, and a few of the 1 cup bean sprouts.
  5. 5Fold the left and right sides of the wrapper inward over the filling. Then, starting from the bottom edge closest to you, tightly roll the wrapper upwards to enclose the filling completely, creating a neat spring roll.
  6. 6Repeat steps 3, 4, and 5 with the remaining 11 rice paper wrappers and filling ingredients until all spring rolls are made. Serve the Gỏi Cuốn immediately with the prepared dipping sauce.
