Ingredients

  • 8 sheets Rice paper wrappers
  • 12 pieces Cooked shrimp, peeled and deveined
  • 4 oz Rice vermicelli noodles, cooked
  • 8 leaves Lettuce leaves
  • 1/4 cup Mint leaves
  • 1/4 cup Cilantro leaves
  • 1/2 medium Cucumber, thinly sliced
  • 1/2 medium Carrot, julienned
  • 1/4 cup Hoisin sauce
  • 1 tablespoon Soy sauce
  • 1 tablespoon Rice vinegar
  • 1 clove Garlic, minced
  • 1 teaspoon Sesame oil
  • 1 teaspoon Sriracha

Instructions

  1. 1Bring 6 cups (1.4 liters) of water to a rolling boil in a large pot over high heat (212°F / 100°C). Add the 4 oz rice vermicelli noodles and cook for 2 to 3 minutes, stirring occasionally, until they are tender but still have a slight bite. Drain the noodles immediately in a colander and rinse them with cold water to stop the cooking process, then set aside.
  2. 2In a small bowl, combine the 1/4 cup hoisin sauce, 1 tablespoon soy sauce, 1 tablespoon rice vinegar, 1 clove minced garlic, 1 teaspoon sesame oil, and 1 teaspoon sriracha. Stir all the ingredients together with a spoon until they are well mixed, then set the dipping sauce aside.
  3. 3Prepare your rolling station by filling a shallow dish or pie plate with warm water. Lay a clean, damp kitchen towel or a large cutting board flat on your counter next to the water.
  4. 4To assemble a roll, dip one of the 8 sheets of rice paper wrappers into the warm water for 15 to 30 seconds, or until it feels soft and pliable but is not falling apart. Carefully lay the softened wrapper flat on your prepared damp towel or cutting board.
  5. 5On the lower third of the softened rice paper wrapper, arrange 1 to 2 pieces of the 12 cooked shrimp, a small handful of the 4 oz cooked rice vermicelli noodles, 1 of the 8 lettuce leaves, a few leaves from the 1/4 cup mint leaves, a few leaves from the 1/4 cup cilantro leaves, a few slices from the 1/2 medium cucumber, and a few strands from the 1/2 medium carrot. Do not overfill the wrapper.
  6. 6Fold the left and right sides of the rice paper wrapper inward over the filling. Then, starting from the bottom edge of the wrapper closest to you, tightly roll the wrapper up and over the filling to create a neat spring roll.
  7. 7Repeat this process with the remaining 7 rice paper wrappers and the rest of the ingredients until you have 8 Gỏi Cuốn. Serve the rolls immediately with the prepared dipping sauce.
