Ghanaian Rice Water (Rice Porridge - Nsuo Moo)

A creamy and comforting Ghanaian rice porridge, traditionally made with just rice, water, and a touch of sugar. Can be customized with milk or spices.

Ingredients

  • 1 cup Long Grain Rice
  • 6 cups Water
  • 2-4 tablespoons Sugar
  • 1/4 teaspoon Salt
  • 1/2 cup Milk (optional)

Instructions

  1. 1Rinse the rice in a sieve under cold water.
  2. 2In a large pot, combine the rice and water.
  3. 3Bring to a boil over medium-high heat, then reduce heat to low, cover, and simmer for 40-45 minutes, or until the rice is very soft and the water has thickened.
  4. 4Stir occasionally to prevent sticking. Add more water if it becomes too thick.
  5. 5Stir in sugar and salt to taste. If using, stir in milk. Serve warm.
