Ghanaian Rice Water (Rice Porridge)

Ingredients

  • 1 cup Long Grain Rice
  • 4 cups Dairy-Free Milk (Coconut or Almond)
  • 2 cups Water
  • 1 teaspoon Ground Ginger
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Salt
  • 2-4 tablespoons Sugar or Honey

Instructions

  1. 1Measure the 1 cup of Long Grain Rice into a fine-mesh sieve and rinse it thoroughly under cold running water until the water runs clear.
  2. 2In a large heavy-bottomed pot, combine the rinsed 1 cup of Long Grain Rice, 2 cups of Water, and 4 cups of Dairy-Free Milk.
  3. 3Add the 1 teaspoon of Ground Ginger, 1/2 teaspoon of Nutmeg, and 1/4 teaspoon of Salt to the pot.
  4. 4Place the pot over medium-high heat and bring the mixture to a rolling boil, approximately 212°F (100°C).
  5. 5Once boiling, immediately reduce the heat to low, cover the pot tightly with a lid, and let it simmer for 20 to 25 minutes. Stir the mixture frequently, every 5 minutes, to prevent the rice from sticking to the bottom of the pot. The porridge is done when the rice is very soft and the mixture has thickened to a creamy consistency.
  6. 6Remove the pot from the heat.
  7. 7Stir in 2 to 4 tablespoons of Sugar or Honey until fully combined. Taste and add more sugar or honey if desired.
  8. 8Serve the Ghanaian Rice Water hot.
