Ghanaian Plantain Chips (Kelewele)

Spicy and sweet plantain chips, a popular Ghanaian street food. Made gluten-free by simply avoiding any wheat-based coatings.

Ingredients

  • 3 large Ripe Plantains
  • 1 tsp Ginger
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Nutmeg
  • 1/4 tsp Salt
  • 2 cups Vegetable Oil

Instructions

  1. 1Peel the 3 large ripe plantains and cut them into 1/2-inch thick slices.
  2. 2Finely grate the 1 tsp of ginger.
  3. 3In a medium bowl, combine the grated ginger, 1/4 tsp cayenne pepper, 1/4 tsp nutmeg, and 1/4 tsp salt.
  4. 4Add the plantain slices to the bowl and toss gently until they are evenly coated with the spice mixture.
  5. 5Heat the 2 cups of vegetable oil in a deep 10-inch skillet or a medium-sized heavy-bottomed pot over medium-high heat until it reaches 350°F (175°C).
  6. 6Carefully add the coated plantain slices to the hot oil in batches, making sure not to overcrowd the skillet. Fry for 3-5 minutes per side, or until the plantain chips are golden brown and crispy.
  7. 7Using a slotted spoon, remove the fried plantain chips from the oil and place them on a plate lined with paper towels to drain any excess oil.
  8. 8Serve the plantain chips warm.
