Ingredients

  • 1 lb Chicken pieces (bone-in)
  • 0.75 cup Sunflower seed butter
  • 4 Tomatoes
  • 1 Onion
  • 3 cloves Garlic
  • 1 inch Ginger
  • 0.5 Scotch bonnet pepper
  • 6 cups Chicken broth
  • 2 tablespoons Vegetable oil
  • 1 tablespoon Curry powder
  • 1 teaspoon Dried thyme
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Instructions

  1. 1Season chicken pieces with salt, pepper, curry powder, and thyme.
  2. 2Heat vegetable oil in a large pot. Brown the chicken on all sides and set aside.
  3. 3Blend tomatoes, onion, garlic, and ginger into a smooth paste.
  4. 4In the same pot, add the blended paste and cook for 10-15 minutes, stirring occasionally.
  5. 5Add the sunflower seed butter and stir until well combined.
  6. 6Add chicken broth and bring to a boil. Add the browned chicken back to the pot. Reduce heat and simmer for 30-40 minutes, or until the chicken is cooked through.
  7. 7Add scotch bonnet pepper (optional) for desired heat.
  8. 8Serve hot with rice or fufu.
