Ghanaian Groundnut Soup (Nkatenkwan) with Chicken

A rich and flavorful Ghanaian soup made with groundnut (peanut) paste, chicken, and aromatic spices. Modified to be nut-free by using sunflower seed butter.

Ingredients

  • 2 lbs Chicken pieces (bone-in, skin-on)
  • 1 cup Sunflower Seed Butter
  • 2 tbsp Tomato paste
  • 1 large Onion
  • 1 tbsp Ginger
  • 4 cloves Garlic
  • 1/2 Scotch bonnet pepper
  • 6 cups Chicken broth
  • 2 tbsp Palm oil
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 6 cups Rice

Instructions

  1. 1Season the chicken pieces with salt and pepper.
  2. 2In a large pot, heat the palm oil over medium heat. Brown the chicken pieces on all sides.
  3. 3Remove the chicken and set aside. In the same pot, sauté the onion, ginger, and garlic until fragrant.
  4. 4Add the tomato paste and Scotch bonnet pepper (if using), and cook for another 2 minutes.
  5. 5Stir in the sunflower seed butter until well combined.
  6. 6Gradually add the chicken broth, stirring constantly to prevent lumps from forming.
  7. 7Return the chicken pieces to the pot. Bring to a boil, then reduce heat and simmer for 45 minutes, or until the chicken is cooked through and tender.
  8. 8Season with salt and pepper to taste.
  9. 9Serve hot over cooked rice.
