Ghanaian Fried Plantains (Kelewele - Nut-Free)

Ingredients

  • 3 Ripe Plantains
  • 1/2 cup Vegetable Oil
  • 1 teaspoon Ground Ginger
  • 1/4 teaspoon Cayenne Pepper
  • 1/4 teaspoon Salt

Instructions

  1. 1Peel the 3 ripe plantains and cut them into 1-inch thick slices.
  2. 2In a bowl, combine the 1 teaspoon ground ginger, 1/4 teaspoon cayenne pepper, and 1/4 teaspoon salt. Rub this spice mixture all over the plantain slices until they are evenly coated.
  3. 3Heat the 1/2 cup vegetable oil in a large skillet over medium-high heat until it reaches approximately 350°F (175°C).
  4. 4Carefully add the seasoned plantain slices to the hot oil in a single layer, making sure not to overcrowd the skillet. Fry for 3-4 minutes per side.
  5. 5The plantains are done when they are golden brown and caramelized on all sides. Use tongs to remove the plantains from the skillet.
  6. 6Place the fried plantains on a plate lined with paper towels to drain any excess oil.
  7. 7Serve the Ghanaian Fried Plantains warm.
