German Sausage and Kale Skillet (Dairy-Free, Gluten-Free)

Ingredients

  • 1 lb German sausage
  • 1 bunch Kale
  • 1 lb Potatoes
  • 1 medium Onion
  • 2 tbsp Olive oil
  • 2 tbsp Dijon mustard
  • 1 tsp Caraway seeds
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper

Instructions

  1. 1Prepare your ingredients: Slice the 1 lb German sausage into 1/2-inch thick rounds. Chop the 1 bunch kale into bite-sized pieces. Dice the 1 lb potatoes into 1/2-inch cubes. Dice the 1 medium onion into 1/2-inch pieces.
  2. 2Heat the 2 tbsp olive oil in a 12-inch skillet over medium heat (350°F / 175°C). Add the diced potatoes and diced onion. Cook, stirring occasionally, for 8 to 10 minutes, or until the potatoes are beginning to soften and the onion is translucent.
  3. 3Add the sliced 1 lb German sausage to the skillet with the potatoes and onion. Cook for about 5 minutes, stirring occasionally, until the sausage is browned on both sides.
  4. 4Add the chopped 1 bunch kale, 2 tbsp Dijon mustard, 1 tsp caraway seeds, 1/2 tsp salt, and 1/4 tsp black pepper to the skillet. Stir everything together to coat the kale and sausage with the mustard and seasonings. Cook for 3 to 5 minutes, stirring frequently, until the kale is wilted and tender.
