  • 1 lb Shrimp (peeled and deveined)
  • 6 cloves Garlic (minced)
  • 2 tbsp Olive Oil
  • 1 cup Pineapple Chunks (canned in juice, drained)
  • 4 cups Cooked Rice (white or brown)
  • 1/4 cup Green Onions (chopped)
  • 2 tbsp Coconut Aminos
  • 1 tsp Sesame Oil
  • 1/4 tsp Red Pepper Flakes (optional)

Instructions

  1. 1In a large skillet, heat olive oil over medium heat.
  2. 2Add minced garlic and sauté for about 1 minute, until fragrant.
  3. 3Add shrimp and cook for 3-4 minutes per side, until pink and cooked through.
  4. 4Stir in coconut aminos and red pepper flakes (if using).
  5. 5In a separate bowl, combine cooked rice, pineapple chunks, and green onions.
  6. 6Serve the garlic shrimp over the pineapple rice. Drizzle with sesame oil.
