  • 1 lb Large Shrimp, peeled and deveined
  • 6 cloves Garlic, minced
  • 3 tbsp Coconut Aminos
  • 2 tbsp Lime Juice
  • 1 tbsp Brown Sugar
  • 1 tsp Ginger, grated
  • 2 tbsp Olive Oil
  • 1 can Coconut Milk
  • 1 cup Jasmine Rice
  • 1 cup Water
  • 2 tbsp Chopped Green Onions

Instructions

  1. 1Cook rice: In a saucepan, combine jasmine rice, coconut milk, and water. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  2. 2Prepare shrimp: In a bowl, mix shrimp with garlic, Coconut Aminos, lime juice, brown sugar, and ginger. Marinate for 10 minutes.
  3. 3Cook shrimp: Heat olive oil in a large skillet over medium-high heat. Add the shrimp and cook for 3-4 minutes per side, or until pink and cooked through.
  4. 4Serve: Serve the garlic shrimp over the coconut rice, garnished with chopped green onions.
