- 1Scrub the 500 g of small potatoes clean. Cut them into bite-sized pieces, about 1 inch (2.5 cm) in size.
- 2Place a 10-inch (25 cm) skillet over medium heat, 325°F (160°C). Add the 1 tbsp of vegetable oil.
- 3Once the oil is shimmering, add the prepared potatoes to the skillet. Cook for 5 minutes, stirring occasionally, until the potatoes are lightly browned on all sides.
- 4Pour the 3 tbsp of soy sauce, 2 tbsp of sugar, 1 tbsp of mirin, and 1 minced clove of garlic into the skillet with the potatoes. Stir everything to combine.
- 5Bring the mixture to a simmer, then reduce the heat to medium-low, 300°F (150°C). Cover the skillet and cook for 15-20 minutes, or until the potatoes are tender when pierced with a fork and the sauce has thickened. Stir the potatoes occasionally to prevent them from sticking to the bottom of the pan.
- 6If the sauce is not thick enough after 20 minutes, remove the lid and continue to cook for a few more minutes, stirring constantly, until it reaches your desired consistency.
