Gamja Jorim (Braised Potatoes)

Sweet and savory braised potatoes in a soy sauce-based sauce. A classic Korean side dish.

Ingredients

  • 1 lb Potatoes
  • 3 tbsp Soy sauce
  • 2 tbsp Sugar
  • 1 tbsp Mirin (sweet rice wine)
  • 1 clove Garlic
  • 1 tsp Sesame oil
  • 1 tsp Sesame seeds
  • 1/2 cup Water

Instructions

  1. 1Peel the 1 lb Potatoes and cut them into bite-sized pieces, about 1-inch cubes.
  2. 2In a large heavy-bottomed pot, combine the 3 tbsp Soy sauce, 2 tbsp Sugar, 1 tbsp Mirin, 1 clove Garlic (minced), 1 tsp Sesame oil, and 1/2 cup Water. Stir to combine.
  3. 3Place the pot over medium-high heat (375°F / 190°C) and bring the sauce to a simmer. This should take about 3-5 minutes.
  4. 4Carefully add the cut potatoes to the simmering sauce. Make sure the potatoes are mostly submerged.
  5. 5Reduce the heat to medium-low (300°F / 150°C), cover the pot, and let the potatoes braise for 20-25 minutes. Stir occasionally to prevent the potatoes from sticking to the bottom of the pot.
  6. 6Continue to cook, uncovered, for another 5-10 minutes, or until the potatoes are tender when pierced with a fork and the sauce has thickened to a syrupy consistency.
  7. 7Remove the pot from the heat. Garnish the Gamja Jorim with the 1 tsp Sesame seeds. Serve warm or cold.
