Ingredients

  • 2 lbs Chicken wings
  • 2 stalks Lemongrass, minced
  • 4 cloves Garlic, minced
  • 1 small Red chili, minced (adjust to taste)
  • 2 tbsp Fish sauce
  • 1 tbsp Sugar
  • 1 tbsp Soy sauce (nut-free)
  • 1 tbsp Vegetable oil
  • 1/2 tsp Black pepper

Instructions

  1. 1In a large bowl, combine the minced 2 stalks lemongrass, minced 4 cloves garlic, minced 1 small red chili, 2 tbsp fish sauce, 1 tbsp sugar, 1 tbsp soy sauce, 1 tbsp vegetable oil, and 1/2 tsp black pepper. Mix everything together until it forms a marinade.
  2. 2Add the 2 lbs chicken wings to the bowl with the marinade. Toss the chicken wings to make sure they are all coated evenly.
  3. 3Cover the bowl and place it in the refrigerator to marinate for at least 30 minutes. For best flavor, marinate overnight.
  4. 4Preheat your grill to medium heat, which is about 350°F to 400°F (175°C to 200°C).
  5. 5Place the marinated chicken wings on the preheated grill. Grill for 20-25 minutes, turning them every few minutes, until the wings are cooked through and have some nice charred spots. The internal temperature should reach 165°F (74°C).
  6. 6Remove the chicken wings from the grill and let them rest for 5 minutes before serving.
